Greens are back (almost) full throttle with: Today, we received Certified Organic BABY ARUGULA from Landisdale Farm. On Thursday, we’ll get more BABY ARUGULA from Rineer Family Farms and ASIAN MIX from Green Meadow Farm; and on Friday, BABY SPINACH and loose MIXED WINTER GREENS (includes kale, spinach and chickweed) from Lancaster Farm Fresh Co-Op.

Also new are ORGANIC GOLD RUSH and CAMEO APPLES both from Kauffmans’ Fruit Farm.

Aside from produce, we're expanding our flour collection from Daisy Organic Flours with 100% Certified Organic ALL PURPOSE FLOUR, BREAD FLOUR and WHITE & WHOLE WHEAT PASTRY FLOURS; Arriving on Thursday is more BUCKWHEAT FLOUR and WHEAT GERM MEAL from Haldeman's Mill via Green Meadow Farm.

On Friday, we'll get our first shipment of GLUTEN-FREE BREADS, DINNER ROLLS and FLATBREAD from Amaranth Bakery based in Lancaster Co. to expand our growing section of gluten-free items.

The Farmstand was in the New York Times yesterday! An article called, 'Rare Breeds, Frozen in Time' featured Fair Food partner Swiss Villa Farm (SVF) Foundation and their work to preserve heritage breed animals, and highlighted our Heritage Breed Education project.

Did you know that much of the meat, dairy and eggs we sell atHeritage Breed the Farmstand comes from heritage breed animals? Preserving heritage breed livestock has always been a goal of our work because they are best suited for being raised on pasture. As most of us know, animals raised on pasture enjoy a more natural, social and healthy life. Fair Food and SVF believe that we must eat them to save them, which is known as "conservation on the hoof." In other words, like with all agricultural products, these heritage breeds require a viable market for farmers to continue raising them.

For that reason, Fair Food and SVF are partners in a Heritage Breed Education project, scheduled to launch at the Farmstand this spring. The goal of the project is to use the Fair Food Farmstand as a platform for raising awareness about heritage breed animals and to more clearly identify the heritage breed products we already sell at the Farmstand. Some of the farms that are raising pure and mixed heritage breeds are Country Time Farm (pork), Meadow Run Farm (pork), Spring Water Farm (Dutch Meadows Raw Milk), Swiss Villa Dairy (Raw Milk), Natural Meadows Farm (eggs), Landisdale Farm (beef), and more! Be on the lookout this spring for the launching of the "Fair Food Heritage Breed" brand!

Whole Spelt Salad with Roasted Rutabaga, Feta and Hazelnuts
Time: About 1 hour

This recipe was adapted by Farmstand worker, Federico Santoyo; from a recipe in the New York Times.

1 1/2 pounds rutabaga, peeled and cut into 3/4-inch pieces
5 tablespoons extra virgin olive oil, more for drizzling
1 tablespoon maple syrup
3/4 teaspoon kosher salt, more to taste
Freshly ground black pepper to taste
1 1/2 cups whole spelt grains
2 tablespoons finely chopped shallot
2 teaspoons red wine vinegar, more for drizzling
1 fat garlic clove, minced
1/2 cup crumbled feta cheese
1/2 cup toasted, chopped hazelnuts (or other toasted nuts)
2 bunches watercress or arugula, cleaned and trimmed.

1. Preheat oven to 400 degrees. Toss rutabaga with 2 tablespoons oil, the maple syrup, 1/2 teaspoon salt and black pepper to taste. Spread out on a baking sheet and roast, stirring once or twice, until rutabaga is very tender and browned, 30 to 40 minutes.

2. Meanwhile, bring a large pot of salted water to a boil and add farro. Cook until tender, checking often. This can take from 20 minutes to an hour, depending upon type of farro used. Add more water if necessary.

3. In a large bowl, whisk together the shallot, vinegar, garlic and 1/4 teaspoon salt. Whisk in 3 tablespoons olive oil and some pepper.

4. Drain spelt well and add to bowl along with rutabaga, tossing everything well. Let cool slightly (it can still be warm but not hot), then mix in the cheese and hazelnuts. Taste and add more salt, pepper and olive oil if necessary.

5. In another bowl, drizzle watercress or arugula with a little oil and vinegar and toss well. Serve farro on a bed of watercress (or microgreens).

Yield: 6 to 8 servings.
