Micro greens have big flavor

Country Time is back! Ember and Paul will be delivering their delicious pork on Thursday afternoon. You can expect nitrate-free bacon, pork chops, cutlets, tenderloin, 'butt roast (shoulder)' and sausage. All of their sausage will be on sale for $4.50/lb until February 3rd!

Micro-greens are in from Oh Produce! in Kempton, PA. These beautiful sprout-like greens are an interesting and nutritious addition to a salad or sandwich, as well as a flavorful garnish.

While making a list of possible topics for this week's email, I kept returning to the accolades that those within our organization, and others we work with, seem to be receiving lately, and so we wanted to toot some horns:

We are very proud of our farmers Angie and Joe Evens of Oley Valley Mushroom for their multiple wins at the Farm Show this year! Two first place ribbons as well as two second place and one third place win for their Shiitake and Oyster Mushrooms and their Specialty Mushroom Medley.


Ann Karlen, founding Director of Fair Food ­ and the Farmstand ­ was also named one of the '76 Philadelphians to Watch' by Philly Magazine for the next decade.

You may have seen last week's City Paper article 'The Cult of Seasonality' where the work of Fair Food was featured prominently. There was also a link to farmtophilly.com, the great blog which is run by one of our volunteers, Nicole Wolverton.

Fair Food is honored, once again, to be the beneficiary of a Feast Your Eyes Catering Salon Dinner. This year's theme, BRAZIL! Come out for an evening of great food and drink while supporting the programs of Fair Food.

Lastly, the Farmstand was so flattered to receive a surprise visit by author Michael Pollan ("The Omnivore's Dilemma" and this year's "In Defense of Food") last week. During what had to be a marathon day of appearances, readings and interviews, he stopped by with esteemed Inky writer Rick Nichols. He was so engaging and warm, talking with many of our volunteers and goofing around with some Hubbard squash. He was very impressed with the 'Stand!

Salad of Arugula and Shellbark Hollow 'Dry Sharp Goat' Cheese
with Maple Vinaigrette

The amount of Arugula, and goat cheese you will need depends upon how many you want to serve with salad, but it's very flexible.

Sometimes I'll add some red onion, sweet red pepper, or a grape tomato or two (or whatever else I have around that sounds good); I've added the occasional mandarin orange and candied walnut; you get the idea.

Maple Vinaigrette
5 tablespoons maple syrup
4 tablespoons cider vinegar (you may also want to add a few squeezes of
lemon juice, depending on the sweetness of the maple syrup and the amount of
mustard you decide to use)
2-3 teaspoons Dijon mustard
1 (generous) tablespoon minced shallots
1/4 cup olive oil
1/4 cup vegetable oil
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Pinch of cayenne pepper

Whisk together the maple syrup, vinegar, lemon juice (if using), mustard, and shallots. Combine oils and then drizzle oil into maple syrup mixture, whisking constantly, until well mixed and emulsified. Mix in the seasonings.

Store in the refrigerator for up to one month. Whisk (or shake - I store mine in a bottle and just shake it up) before using.

This dressing is really tasty and I could see it also being a terrific marinade for salmon.
