Fresh & New This Week:

Return of the pickle! Weaver’s Way Co-Op is now producing the much-loved PHILLY PICKLES (formerly S&C Pickles) and we got our first taste this week. They sent us some “Mild” and “Hot” PICKLES this week, and we’ll be sure to stay stocked from now on (unless staff buys it all!).

This week, we'll also satisfy our sweet teeth with get BISCOTTI from Gilda’s Biscotti. Last week we got our first taste of gluten free BREADS, DINNER ROLLS and FLATBREAD from Amaranth Bakery. We will be stocking their gluten and wheat free baked goods on the weekends from Friday – Sunday.

Aside from baked goods, we’re trying YOGURT CHEESE from Friendly Farm, due in on Friday morning. This is one of the simplest but tastiest cheeses and is easy to digest. Come on by for a sample!

Last but not least, CARROTS, PARSNIPS, and RUTABAGA will be delivered on Friday from Deep Root Organic Co-Op in Johnson, Vermont. See our message this week for our reasons why we’ve expanded our reach for these products this winter.

Starting this week, you may be surprised to see some vegetables at the Farmstand that have come from as far away as Vermont. In an attempt to keep the ‘Stand stocked with your favorites, we’ve extended our reach to include Certified Organic winter storage vegetables like carrots and parsnips from a grower-owned cooperative in Vermont called Deep Root Organic. Deep Root Organic is famous for growing and storing winter vegetables so their customers can have produce year round (even when there is 3 feet of snow on the ground!), and can serve as a model for farms and co-ops closer to home.

As many of you know, Fair Food’s work extends beyond the Farmstand. Over the last year I have been working on a grant funded research project to study farms who have developed extensive procedures for climate controlled cold storage of their root crops, and make recommendations to those farms that are just getting started. The first part of my research brought me to farms in Pennsylvania that are in the beginning stages of learning to store winter crops and the last part of my research, in December, brought me up to the Deep Root Co-op in Vermont. There, I visited four of the 18 farms in the Co-Op and spoke with the farmers and their staff to understand what it takes to build different kinds of cold storage facilities, as well as the impact that selling winter storage crops has on their farm businesses. I learned so much about how they have have addressed the seasonality 'glass ceiling' that many Southeastern Pennsylvania farms also face when trying to meet wholesale market demands through the winter. This project is being funded by the Sustainable Agriculture Research and Education program (SARE).

We will ONLY be sourcing winter storage vegetables from Deep Root that are NOT currently available in our region. With this research, Fair Food hopes to help farmers closer to home grow and store hearty crops to last us through the winter, AND ramp that production up for next year. In the meantime, eat your carrots!

RUTABAGA & CARROT MASH
Gourmet, November 2000

Yield: 8 servings
Active time: 15 min
Total time: 50 min

* 2 rutabagas (2 1/2 pounds total), peeled and cut into 1-inch pieces
* 5 carrots, cut into 1-inch pieces
* 3 tablespoons unsalted butter
* 3 tablespoons packed light brown sugar (or maple sugar!)
* 1 teaspoon kosher salt

Cook rutabagas and carrots in boiling salted water to cover by 1 inch in a large pot until tender, about 30 minutes. Transfer vegetables with a slotted spoon to a food processor and purée with butter, brown sugar, and salt until very smooth. If necessary, transfer purée back to pot and reheat.
