In this time of empty fields and bitter frost, the wide-open winter market for fresh, local greens has lead farmers to some pretty high-tech solutions. Butter Valley Harvest, the folks stocking us with that silky Butterhead and delicate Romaine Lettuce (plus a flavorful greens mix this week), are a wonderful demonstration in the use of innovative new technologies to preserve the family land and build the local food system. In the past 11 generations of farming their land in Berks County’s Butter Valley, the Ehst family have had to move with the markets to stay afloat. The family property has been home to: a blacksmith shop, a hydro-powered mill, a dairy farm, a chicken and pork farm, and most recently a conventional feed operation focusing on corn, soybeans and wheat. Last year, father Kenneth and son Ryan Ehst both returned to the family farm after years as teachers and replaced the dilapidated wooden barn with a high-tech greenhouse and hydroponic system. The greenhouses were completed in late fall and they planted their first batch of hydroponically grown winter lettuces and salad greens; the Farmstand was one of the first to receive the delicious fruits of their labor last week! The first greenhouse tomatoes were planted in early January and are expected to be ready for market in mid-spring.

Though not appropriate for all farms, their decision to go hydroponic was based on a variety of factors: primarily the ability to capture the lucrative winter greens market, but also for the environmental advantages that this system offers them. As their website states, their hydroponic (or soil-free) system uses 20% less water than field based cropping. Plants are grown in a water-based nutrient solution and their computer-monitored environment is controlled to maximize plant growth and health. No chemical pesticides or herbicides are used in the greenhouses. The Ehsts are in the process of installing a geothermal heating system to reduce their dependence on fossil fuels by 90%, and will supplement this with solar panels in the next few years. The other main benefit of this system is in the product’s ability to maintain freshness. Have you wondered how that delicate Butterhead lettuce managed to stay so perky and delicious? The answer is that it is still alive! Those roots are still attached to their little cube of substrate and will stay alive as long as they are kept hydrated at an appropriate temperature. Lucky for us, the Ehsts are selling their produce through the Common Market and we hope to continue to stock their greens and herbs throughout the cold months.

E2 is an ongoing PBS series comprised of 30 half hour episodes that explores solutions to pressing environmental and social challenges. It is filmed by documentary film company Kontentreal and narrated by Brad Pitt.

There is beautiful footage of Meadow Run Farm, Green Meadow Farm, and the Farmstand. There is even an interview with Farmstand founder, Ann Karlen, and a shot of Co-Manager Ruth Holbrook! The full episode will be online for a limited time.

Polenta Casserole with Sauteed Mushrooms, Blue Cheese and Walnuts (serves 6-8)

INGREDIENTS

Polenta
* 2 ½ cups whole milk
* 3 cups water
* salt
* 1 ½ cups instant polenta
* 2 TBS unsalted butter
* 1 medium garlic clove, minced
* ground black pepper

Topping
* ¼ cup olive oil
* 12 oz. Portobello mushroom caps (~8 medium caps), sliced ¼ inch thick
* 1 ¼ lbs white button mushrooms, sliced ¼ inch thick
* 1 large red onion, sliced thin
* salt
* 6 medium garlic cloves, minced
* 1 TBS minced fresh thyme
* ¼ oz. dried porcini mushrooms, rinsed and rehydrated, with soaking liquid reserved
* ground black pepper
* 5 oz. gorgonzola cheese (~ 1 ¼ cups) Try the Birchrun Hills Farm Blue Cheese from the Farmstand!
* ¾ cup walnuts, coarsely chopped
* 2 TBS minced fresh parsley leaves

1. Preheat to oven to 400 degrees

2. FOR THE POLENTA: bring the milk, water and 2 tsp salt to a simmer in a large, heavy bottomed saucepan over medium-high heat. Very slowly, pour the polenta into the boiling liquid while stirring constantly in a circular motion with a wooden spoon. Reduce the heat to the lowest possible setting and cover. Cook, vigorously stirring constantly in a circular motion. Reduce the heat to the lowest possible setting and cover. Cook, vigorously stirring the polenta every few minutes, making sure to scrape clean the bottom and edges of the pot, until the cornmeal has lost its raw cornmeal taste and become soft and smooth, about 10 minutes [NOTE: I had to cook a lot longer and occasionally add extra water … just keep checking]. Off the heat, stir in the butter and the garlic. Season to taste with salt and pepper; cover the pot to keep the polenta from drying out and set it aside.

3. FOR THE TOPPING: Heat the oil in a Dutch oven over high heat until shimmering. Add the portobellos, white button mushrooms, onion, and ½ tsp salt; cook, stirring often, until the mushrooms have released their liquid, shrunk dramatically, and browned, about 20 minutes. Add the garlic, thyme and dried porcini mushrooms with their reserved liquid; cook until most of the liquid has evaporated, about 2 minutes. Season to taste with salt and pepper.

4. Spread the cooked polenta into the bottom of a 9 by 13-inch baking dish. Spread the mushrooms evenly over the polenta and sprinkle with the Gorgonzola and walnuts. Bake until the polenta has heated through and the walnuts have toasted, about 20 minutes. Cool for 10 minutes. Sprinkle with the parsley before serving.
