Farmer
Cooperatives are a great gift to retailers such as the Fair Food
Farmstand. By consolidating products from different farms, they
provide the buyer (that's us) with larger volumes and variety without
having to make a dozen phone calls to individual growers. We depend
heavily on two farmers coops to stock our Farmstand. Lancaster Farm
Fresh Coop provides us with organic produce and dairy all year,
and in the winter we are grateful to have access to organic produce
from Tuscarora Organic Growers Cooperative.
When asked what makes Lancaster Farm Fresh Cooperative
unique, member farmer Aaron Zook replied with a laugh, "Farmers
working together." Sounds like a simple goal, but we're told
it's really quite an accomplishment. LFF started in 2006 with 12
Lancaster county farmers to serve the Philadelphia marketplace.
Since then, it has grown tremendously, almost doubling in membership
last year, and will represent 38 certified organic Amish and Mennonite
farms this season. LFF plays the role of wholesale marketer and
distributor: reaching out to potential buyers, managing orders,
coordinating pick-up and delivery. LFF also runs a 600 member CSA.
With a strong commitment to organic production, LFF helps farmers
make the transition to organic certification and pasture-based animal
husbandry. The goal as stated by Casey Spacht, LFF's General Manager,
is to "produce healthy plants, animals and people" and
to build a strong enough business that member farmers can make a
year-round living from farming, rather than having to seek off-farm
employment in the winter.
Lancaster Farm Fresh learned a lot about organizing
a coop from the more established Tuscarora Organic Growers Cooperative,
located in south central Pennsylvania. Formed in 1988 by seven neighboring
organic farms, TOG has become one of the oldest and largest cooperatives
of certified Organic farms in the country. "Without markets
small scale sustainable farmers cannot survive," says David
Robb, general manager. With a current membership of 26 farms, TOG
fosters cooperation rather than competition between member farms
through crop coordination, providing a level of stability to both
customers and farmers that no small farm could accomplish on its
own. Though the bulk of their produce is grown in Pennsylvania's
Juniata River Valley, they have recently started working with partner
farms in other regions (such as Uncle Matt's Organics in Florida,
who provide us with citrus) to stabilize their winter markets. TOG
mainly wholesales to grocery stores and restaurants in the DC/Baltimore
area, but the Farmstand is lucky enough to get regular deliveries
through one of their members, Landisdale Farm.

Heirloom Cranberry Leek Pilaf

Cranberry pilaf is a perfect pairing for simple roasted chicken.
Get the
bird in the oven and by the time it¹s done, the rice will
be just plump and
steaming, still with its brown grain bite. Sweet leeks and toasty
pecans
balance the tart pop of the berries, which give way as they cook
from
vibrant red to blush instead.
1 medium leek, half-moon sliced (white and light green parts
only) and
cleaned
1 small garlic clove, thinly sliced lengthwise
1 tablespoon olive oil
1 cup brown rice
1 cup heirloom cranberries
2 cups stock or broth (chicken, turkey, ham or vegetable)
Kosher salt and freshly ground pepper, to taste
1/4 cup chopped pecans (or the local hickory nuts that we've
been
getting!-Sarah), toasted
Heat olive oil in a medium pan that can be fitted with a lid
over medium
high heat. Add leeks and sauté about 30 seconds. Add garlic
and sauté and
additional 30 seconds. Stir in rice to coat with the vegetables
and oil.
Add cranberries and stock and bring the liquid to a boil. Cover
the pan and
turn the heat to low. Let the rice barely simmer for 30 minutes.
Turn off
the heat and keep the pan covered and additional 10 minutes. Uncover,
season with salt and pepper and fluff with a fork. Sprinkle with
toasted
pecans and serve.
