Philip Horst-Landis with his sheep in Lancaster County. We'll be receiving a big lamb shipment this week.

Make sure to ask for a sample of the remarkable English-Style Cheddar from Otterbein Acres in Newburg, PA. John and Lena Fisher make this cheese by hand with raw milk from grass-fed Jersey cows. In accordance with English tradition, the cheese is covered in lard and wrapped in muslin, then aged in their underground cellar for four months. The result is both sharp and earthy, rich and complex.

Keep your eyes open for two new flavors of chicken sausage from Griggstown Quail Farm: Broccoli Rabe and Fresh Basil Sun-Dried Tomato. Since their introduction at the stand a few weeks ago, these flavorful sausages have been flying out of the freezer. Don't miss out on this tasty addition to just about any meal.

Having started as a volunteer in 2004, Lori Ferri has become a core member of our paid staff, and a thread of continuity for the Farmstand in times of change and growth. Lori will be leaving us shortly to move to New York for culinary school. We wish her the best and will all really miss her.

One of the dozens of things that make the Fair Food Farmstand different from most other small grocery shops is the fact that most of our staff is volunteers. We have a handful of paid staff, but 25 people just this week did their weekly 3-hour volunteer 'shift' with us. That adds up to 72 hours of donated time from a very special group of people. Though sadly there is no photo of the lovely Lori here, at left is Jon, and below right are Molly & J.R.

Some are students, and some are teachers. We have a veterinary student who volunteers with her husband, who is an environmental engineering consultant. One of our board members does a weekly shift that she says is the most fun she has all week! One of our volunteers is a senior in high school (we have four dedicated high schoolers) and is in charge of doing all the cooking for her family. We have several musicians and singers, and a couple of writers, one of whom runs a food blog, and one who writes for a music blog. Many of us at the Farmstand have a food service background, or currently work in the industry. All of us like to cook, and yes, we all like to talk about it.

The time, effort and spirit of our volunteers are a true gift to the 'Stand. The many tasks that need to be done could never be completed by our paid staff, and as a nonprofit dedicated to education through demonstration, it gives us more time to interact with our customers - and each other. A recent visitor to the 'Stand declared it an "Island of warmth," thanks, Chuck! Our shared curiosity and passion for local, sustainable and yummy food continually motivates us to reach out even more.

Recipe from Ali Waks, Farmstand customer

Carrot Salad (serves 2)

* 2-3 carrots ( beautiful with multi-colored carrots)
* 1/2 cup whole almonds (blanched if you have them)
* 1/2 cup slivered dates
* 1 medium sized thinly sliced shallot
* 1 1/2 cup baby arugula
* 1/2 cut mixed fresh herbs (mint, parsely, cilantro)

Dressing

* 1/4 cup olive, walnut or almond oil
* 2 tablespoons orange juice
* 1/2 tsp cumin
* 1 teaspoon honey (date or maple syrup if you are vegan)
* 1 teaspoon lemon juice
* Salt & pepper to taste

1. Whisk together dressing ingredients (add oil last)
2. Peel carrots...keep peeling till you have a pile of carrot ribbons
3. Place the carrot ribbons, almond, dates & shallot in a non reactive
bowl and pour dressing over
4. Mix well and let sit for at least 20 minutes but no more than an hour
5. Right before serving mix in Arugula & greens
