Newly molded cheeses in the aging cave at Valley Shepherd Creamery

Green Meadow Farm is back with a bang from their holiday break. They will be delivering Baby Beets, Mesclun Mix, Bulls Blood Baby Beet Greens, Baby Rainbow Chard, Lemongrass, and more from Glenn and Ian’s fry-oil powered greenhouse in Gap, PA.

Overbrook Herb Farm has promised us a small quantity of tender baby Purple Haze carrots. Larger purple, yellow, and orange carrots will follow on Saturday from Tuscarora Organics.

We have just received a shipment of raw-milk cave-ripened cheeses from Valley Shepherd Dairy. Included are Farmstand favorites Oldwick Shepherd, Shepherd’s Basket, and Nettlesome, as well as a new treat, BaBaBlue, a mixed-milk blue.

By Saturday afternoon, you can expect Certified Organic lemons from Uncle Matt's Fresh, Inc., the sustainable citrus farm in Florida that has been supplying us with oranges and grapefruit.

I’d like to introduce myself as the new, very excited Farmstand Co-Manager. As promised last week, here’s a little more about me. I grew up in rural northern California, where I first developed a passion for farming and fresh vegetables at my local CSA, Live Power Farm. Later, my family moved overseas, spending time in the Netherlands, Saudi Arabia, and Malaysia. I returned to the US to attend UC Santa Cruz, where I studied environmental studies and sustainable agriculture. During this time, I worked on several organic farms, and was involved in agricultural research for the Center for Agroecology and Sustainable Food Systems in the San Joaquin Valley. Philadelphia has been my home since 2004. Among other things, I have been working for Women’s Medical Fund, volunteering at the Fair Food Farmstand, and exploring the extraordinary agricultural richness of this region. I’m thrilled to be working in a place where the family farm – in all its incarnations – is still thriving, and even more thrilled to get to link up family farmers with appreciative eaters.

Like Emily before me, I will be doing the ordering for the Farmstand. So, I’m in the office Mondays and Tuesdays, and at the Farmstand on Wednesday, Thursday, and Friday mornings. I look forward to meeting or reconnecting with all of you in the coming weeks, and feel free to shoot me an email anytime at ruth@whitedog.com

Lastly, congratulations to our incredibly prepared Saturday morning shoppers: last Saturday we were open for a busy hour and a half without having to give out a single bag. Let’s keep it up, team!

Celerie remoulade (from Liz Mednick)

1 large or 2 medium heads of celeriac
juice of one lemon
mayonnaise
dijon mustard
1/2 cup cornichon pickles
chervil, tarragon or parsley, fresh or dried
salt, pepper

Cut celeriac in half and remove outer skin by taking off strips with a sharp chef's knife, cutting from top of the root to the cutting surface. Julienne the celeriac fine -- a mandoline is helpful but not necessary. Place julienned celeriac in a bowl and add the juice of one lemon. Toss and set aside for about 20 minutes. Add a healthy dollop of your favorite mayonnaise (enough to coat the celeriac) mixed with 1 teaspoon of good dijon mustard. Dice cornichons fine and add to celeriac. Sprinkle with the chervil, tarragon, or parsley, fresh or dried depending on what's available. Salt and pepper to taste. Serve at room temperature.
