The availability listing for the Farmstand is beginning to read like a winter roll call of root vegetables. This time of year it's easy to get a little panicky, "What will we EAT in winter?" But I can assure you that the storage crops are looking lovely as ever. They roll in all starchy and sweet, ready for a little time in the root cellar until we really need them. The undisputed royalty of the storage crop court are the winter squash: the solid neck pumpkins and butternuts, the prim delicatas and sculptural acorns, and the mammoth hubbards and kabochas. Though we associate October with the pumpkin patch, we're actually just catching the very end of a squash harvest that began way back in August. Now, as the dusk rolls in ever earlier, we scoop up great armloads of these hard-shelled beauties to roast and puree into soups. Or we slip them a dash of cinnamon and a pinch of nutmeg for a flavor that's unmistakably autumnal. What to eat in winter? Plenty.
Here's the basic formula for any winter squash (though getting the larger ones in half is a job for a cleaver). Preheat your oven: 375-400 degrees F. Place, cut side down, in a roasting pan or baking sheet and add an inch of water. Cover with a lid or foil and bake 30-60 minutes. The squash is finished when it yields to gentle pressure with the tines of a fork or a paring knife. From here you can make a simple soup (always roast squash first to allow the sugars to caramelize) or, if you're up for a challenge, try one of these recipes at the bottom of this week's e-mail: Baked Acorn Squash with Cranberry Orange Compote or Winter Squash and Kale Risotto.

Tour to Paradise Hill Farm: Heirloom Cranberry Bogs and
Blueberry Bushes
Saturday, October 27, 10:30-2:30pm

Paradise Hill Farm is committed to the environmental and historic conservation of New Jersey's Pine Barrens. Specializing in cranberries and blueberries, they are dedicated to preserving heirloom varieties. The blueberries that we got from them this year were just spectacular (we also now have them available frozen), and now we're offering the white and red cranberries, fresh, at the Farmstand. The farm has been in Mary Ann Thompson's family since 1890. Mary Ann's Grandmother won the Silver medal for quality at the Buffalo exposition in the early 1900s, and she is continuing that tradition today. The farm spans over 800 acres in the Pine Barrens, with 200 acres in cranberry production.
Walk out to the bogs, see their antique machinery, and hear the colorful stories.
Tickets are $25 adults, $12 children (6-13) free for children under 6. Price includes tour and deliciously fresh and local picnic on the farm. Farmers Market Nutrition Program (Senior an WIC) participants receive a 50% discount. Discounts may be available for groups of 5 or more people.

"Faces of Fair Trade: Uniting the Global and Local" Farmers Tour

In collaboration with Equal Exchange, Red Tomato and Oke USA, White Dog Community Enterprises presents the "Faces of Fair Trade: Uniting the Global and Local" tour. Banana farmers from Ecuador and Costa Rica, a pecan farmer from Georgia, and an apple grower from Pennsylvania, will discuss the challenges they face, their experiences in the market, and the impact of consumer support for fair trade and family farms. This event is free and open to the public.

Baked Acorn Squash with Cranberry-Orange Compote
adapted from The Professional Chef, 8th edition
3 green or carnival acorn squash
1/3 c. maple syrup, honey, or brown sugar
1/3 c. (5 tablespoons) butter
salt & black pepper
1. Preheat oven to 400 degrees F.
2. Quarter squash and remove seeds. Place, cut side up, on a baking sheet.
3. Sprinkle/drizzle with sweetener of choice. Evenly divide butter among each quarter of squash. Season with salt and pepper.
4. Cover with foil and bake 30 minutes. Remove foil and bake until tender, basting occasionally.
5. Serve alongside Cranberry-Orange compote.
Cranberry Orange Compote
1 quart cranberries
3/4 c. orange juice
honey, as needed
orange zest from 2 oranges
1. Combine cranberries, juice and enough water to barely cover berries. Add honey and simmer over medium heat until berries are softened and liquid has thickened. Be careful not to scorch.
2. Remove from heat and stir in orange zest, season with salt and pepper.
Winter Squash and Kale Risotto
adapted from Moosewood Restaurant: Low-Fat Favorites
4 1/2-5 c. vegetable or chicken stock
1 c. minced onions
2-3 teaspoons olive oil
1.5 c. arborio rice
1/2 c. dry white wine
2 c. peeled and cubed winter squash (3/4-1 inch cubes)
3 c. stemmed and chopped kale, packed
1/8-1/4 teaspoons nutmeg
1 teaspoon fresh lemon peel
1/4 c. grated pecorino or parmesan cheese
1. Bring stock to boil, reduce to simmer. Meanwhile, in heavy saucepan (nonstick) sauté onions in 2 t. of oil for 5 minutes. Using wooden spoon, add rice and stir until well coated with oil.2. Add wine. When absorbed, ladle in 2 1/2 c. of stock, 1/2 c. at a time, stirring frequently for 2-3 min. each time until rice has absorbed the liquid.
3. Add squash and kale and stir. Continue adding 1/2 c. of broth every few minutes for about 10 minutes, stirring often, until all of stock has been added and rice is tender but firm.
4. Add nutmeg, peel, and salt and pepper to taste. Remove risotto from heat, stir in cheese, and stir immediately |
