Cara-caras, a delicious way to get your Vitamin C

Many of you may remember that last year we were able to source organic citrus from family farms in Florida through the Tuscarora Organic Growers Co-op, which is based in Hustontown, PA. It was so popular that starting this Saturday we will again be offering NAVEL ORANGES, CARA-CARAS (RED NAVEL ORANGES), HAMLIN JUICE ORANGES, NOVA TANGELOS and (tentatively) RED SEEDLESS GRAPEFRUITS. They will be coming through Rosslow Citrus in Fort Pierce, Florida and Uncle Matt's Organics in Clermont, Florida.

By Thursday we will once again have PINECONE BRANCHES, SPRAYS of HOLLY & GREENS, and HOLLY BUNDLES from Indian Orchards in Media, PA. We will also have their home-dried PEACHES, PEARS and APPLES, perfect for those last minute gift basket additions.

Well, as one door closes for the season, another one opens. Last week we let you know that we wouldn't be getting any more pastured eggs from Meadow Run Farm until spring, but we did assure you we'd find another source for you ­ and we have! Cherry Grove Farm is our wonderful new supplier of pasture-raised brown eggs, and they come to us from Lawrenceville, New Jersey, outside of Princeton. Though the chickens primarily live on pasture, they have access to a coop for shelter and supplementary light. Their eggs have yolks with very good color, firm shells, and thick whites. This time of year, the yolks are never as 'solar orange' as in the spring, summer and fall. There just isn't as much green out there for the chickens to eat or sunshine for plants to bask in - and then convert into the chlorophyll that gives the yolks their color. These eggs are delicious, and we're very happy to offer them to you. Cherry Grove is a diversified pasture-based farm, and their website is quite extensive.

As many of us prepare to make a Christmas turkey, I want to share with you a very basic recipe for Poultry Stock that I use. It's from a wonderful chef and former boss of mine, Joyce Goldstein. I worked in her San Francisco restaurant, Square One, for many years, and when she made stock she emphasized the use of chicken BACKS, specifically, for their depth of flavor. Around Thanksgiving I start stocking up on homemade stock for making gravy and hearty soup bases in the coming months. I've made sure that the Farmstand has lots of backs and necks from Natural Acres available for you in our freezer.

Lastly, there have been significant updates to the proposed changes in milk-labeling, and I want to give you a link so you can keep up with the progress. We've received so much feedback from you about this issue, and we thank all of you who have taken the time to write letters voicing your concerns. It's not over yet, so let's keep it up! Also, Alexandra Stafford, of The Bulletin, wrote a great article about it called "Lobbying for Ignorance?" Thanks Ally, and we will really miss you. Have a great time in California!

BASIC POULTRY STOCK
In case you want to make your own stock instead of using canned chicken broth, here is a simple recipe. And I applaud your efforts!

Makes about 4 quarts light stock:

6 lbs chicken pieces (necks, backs, carcasses, thighs)
Water to cover
2 medium onions, coarsely chopped
2 small carrots, coarsely chopped
1 large stalk celery, chopped
3 sprigs parsley
6 peppercorns
2 sprigs thyme
1 small bay leaf
2 leeks, greens only, chopped (optional)
2 garlic cloves (optional)

Wash the chicken parts, then put them in a large stockpot, and cover them with cold water. Bring up to a boil. Lower the heat. Skim the scum off the top of the pot. Simmer for an hour, then add the vegetables, herbs, spices, and optional leek greens and garlic, and simmer slowly for 4 to 5 hours. Remove the solids with a slotted spoon or Chinese skimmer. Pour the stock through a cheesecloth-lined strainer. Chill the stock in an ice bath (Do not cover until it is completely cold). Degrease. This is a basic light chicken stock. You should have about 4 quarts. To increase the stock's flavor, put it in a pot, bring it up to a boil, and cook at a low boil, skimming if needed, until the stock is reduced by half. Chill again.

Note: You see that there is no salt in this recipe. That is because if you salt it and later reduce the stock it will become really salty. Salt the stock only at serving time.
