In response to numerous requests for local grass-fed deli meats, the Farmstand refrigerator is now stocked with Certified Organic nitrate-free sweet beef bologna from Countryside Organics. This charming and flavorful product is a far cry from your typical pasty supermarket bologna, a great snack or sandwich fixing.

A new batch of raw cows-milk cheeses will be arriving from Hendrick's Farm and Dairy in Telford, PA by the end of the week. This will be the Farmstand debut of their Blue Cheddar and Parmesan cheeses, while the Gruyere and Bavarian Swiss are already old favorites.

To say that the annual PASA Conference is inspirational would be trite. The Pennsylvania Association for Sustainable Agriculture is one of the most progressive and productive agricultural organizations in the country, and we are very fortunate, as local ag workers and supporters, to have PASA in our backyard. For many of us, the conference is a time to re-connect with friends from across the State (and beyond!) who are farmers, cheesemakers, activists, educators, and policy makers. We spend several days in intense workshops and meetings covering a myriad of topics, and in between we learn a lot from one another.

One exciting development is the creation of a new formal alliance, yet to be named, among PASA, White Dog Community Enterprises, the Rodale Institute, Pennsylvania Certified Organic, and Food Routes. This alliance, borne out of the recent organized opposition to the milk 'absence labeling' ban, will work on policy issues and be mutually supportive, though we each will remain independant. It was through the combined strength of our organizations and supporters that we successfully convinced the Pennsylvania Department of Agriculture to reverse that ban. We thank you for all of your input, and look forward to your voices being heard again the next time. That will probably be soon since, according to the Food and Drug Administration 'There's no evidence that meat or milk derived from healthy cloned farm animals can harm people." Stay tuned!

There are always excellent keynote speakers and this year was no exception. Diane Wilson opened the conference with her colorful description of her 20+ year fight against polluters on the Gulf Coast of Texas, where she's from. I was not the only one in the audience tearing up and laughing simultaneously. The closing talk was given by Mark McAfee the founder of Organic Pastures. He runs one of the only two raw milk dairies in California, and if you think we've had difficulties here in PA, I invite you to check out his website to hear about their troubles.

I was so happy to meet several of our producers in person - John and Lena Fisher of Otterbein Acres and John and Sukey Jamison of Jamison Farm among them. The Landis family (of Landisdale Farm) were there, and I got to meet their mother, Ruth, who I'd only spoken to on the phone previously. We sat next to each other during a cheese-making demonstration given by Jim Amory, of LeRaysville Cheese Factory. Sue Miller of Birchrun Hills Farm was there, introducing presenters, sampling her cheeses, as well as running for a seat on the board of PASA (go, Sue!). This message would be far too long if I told you about all the people I met, but, I did meet a few new cheese makers that I'm excited about, as well as a physicist at Penn State who led a workshop on wild mushroom hunting ­ and I think I convinced him to come to our area and lead a mushroom walk for us!

Recipes

Roast Pork with White Beans

1 pork roast, about 3 pounds (try and get a roast with some fat on it, like
the shoulder)
2 16 to 18 ounce cans large white lima beans (or butter beans ... I've even
used canned baby butter beans)
Ketchup
Finely minced onion
About 2 tablespoons of brown sugar (or maybe our maple sugar! - Sarah)
Freshly ground pepper

In a 9x12 pan, pour beans, including the liquid. Add enough ketchup to make a rich, red sauce. Add as much minced onion as you dare (I use the dried minced onion to get a really strong oniony flavor), the brown sugar and freshly ground pepper. Stir to blend well.

Nestle the roast in the pan, surrounded by the beans. If the roast has no fat, place strips of bacon across it so it won't dry out. Bake 350 to 375 for about 2 1/2 hours. Check mid-way through cooking. If the beans seem dry, add more ketchup.
