Celia was one of our youngest fans at the mini-Farmstand at the PASA conference.

After years of hearing about it, the Farmstand has finally got its hands on Valley Shepherd Creamery’s SHEPHERD LOGUE CHEESE! This much-touted mold ripened sheep’s milk cheese is cave-aged 4-5 months and rubbed in Provencal herbs. Delicately aromatic, with lovely sheepsmilk foundation.

Hang on to your hats… Betty's Tasty Buttons is now making “BLUE SUE”, a goat’s milk fudge flavored with BIRCHRUN BLUE CHEESE! Subtly savory and rich, this treat was an instant favorite at the “mini-farmstand” at last week’s PASA conference. The first batch will arrive at the stand on Wednesday.

Last week, I had the opportunity to attend the Beginning Cheesmaking Track of the Pennsylvania Association of Sustainable Agriculture (PASA) Conference in State College, PA. Though no cheese was actually prepared during this workshop (it was really aimed at the business of cheesemaking, rather than the act), I came home with renewed appreciation and enthusiasm for this age-old art and have had a “head full of cheese” ever since. Cheese making, in my mind, is a very scientific magic. Because so much of the process is happening at the level of bacteria, yeasts and enzymes, the naked eye can see very little that is happening until the entire structure of the milk has changed. And then, presto - you now have an entirely different food!

For those of you who are new to this concept, the basic cheesemaking process is as follows: warm fresh milk is inoculated with a starter culture and treated either with an enzyme (rennet, for most soft and aged cheeses) or an acid (for some fresh cheeses, like paneer or queso fresco) that separates the curd (mostly fat and protein) from the whey (mostly water and lactose). The curd is then cut and drained, though many types of cheese require that the curd be heated again to expel additional moisture. Drained curds are generally salted and pressed to the desired shape/density, and dried. This “baby cheese” can now be prepared for aging in any number of ways, including inoculation with specific bacteria and yeasts to develop particular flavors, textures or rinds, brined in salt to develop a hard natural crust, covered in wax, etc. The options are really endless, and the variation you taste in cheeses is intricately linked to these choices. Cheeses are then aged in cool, humid environments for anywhere from a few days to several years. Aged cheese is truly a colony of living organisms, and the variety of the specific species and strains of bacteria used to culture a cheese largely define its flavor and texture. The quality (and chemical make-up) of the milk also has a huge impact on the final product, as do the precise conditions under which it is prepared and aged.

In contrast to the complexity of aged cheese, fresh cheeses are quite simple and incredibly gratifying to make in a home kitchen. We really encourage you to try your hand at making cheese at home, using one of the four types of GRASS-FED RAW MILK carried by the Farmstand. They all make wonderful cheese, though my particular favorite is the Brown Swiss Cow’s milk from Swiss Villa Farm. An abundance of recipes can be found online, but I recommend starting with the simplest cheese out there: Lemon Cheese. The farmers of Lancaster Farm Fresh Cooperative (LFFC) are buying seeds and preparing their greenhouses for the 2009 CSA season! Reserve your shares now.

Vegetable and fruit shares are on sale now. LFFC will deliver 25 weeks of locally-grown, freshly harvested and certified organic produce to pick-up sites throughout Philadelphia and the surrounding suburbs. Fruit shares and a weekly pricelist of local farm products including: eggs, chicken, bison sausage, yogurt, raw milk, honey and maple sugar, are available with an LFFC CSA share (special orders not available at RTM and Rittenhouse Square pick-up sites). LFFC provides marketing, sales and delivery for member farms returning 75% of its revenue to the farmer: that’s more than $2 million in 2008!

LEMON CHEESE:

Recipe from New England Cheesemaking Supply site

“This rich and delicious cheese may be made in the evening and will be ready to spread on hot croissants for breakfast! It is a great cheese to start for all ages and experience. You may have to add a bit more or less lemon juice depending on the milk you use.”

Ingredients

* 1 gallon of milk
* 2 large lemons

Warm milk to 165 degrees F (you may go up to 190F to help your milk coagulate). Stir often to avoid scorching the milk. Add the juice of the lemons to the milk. Stir and allow to set off the stove for 15 minutes.

The warm milk will separate into a stringy curd and a greenish liquid whey. Line a colander with cheesecloth and pour the curds and whey into the colander. Save the whey for baking bread if desired. Tie four corners of the cheesecloth into a knot and hang the bag of curds to drain for an hour or until it reaches the desired consistency.

Remove the cheese from the cloth and place it in a bowl. Add salt to taste -- usually about 1/4 teaspoon. You may mix in herbs. Fresh dill leaves are delicious. Place the cheese in a covered container and store in the refrigerator. This cheese will keep up to a week. It is a moist spreadable cheese with a hint of lemon taste.
