Chris Fisher's Bison Herd

One of the most amazing things I have seen in the last couple of years is Bison, stampeding, in Lancaster County. Last summer I visited several member farms of the Lancaster Farm Fresh Co-op. While I am always happy to see tomato plants, I was blown away once we got to Chris Fisher's farm and saw his Bison. As a youth, Chris, who is Amish, started a project raising bison on his family's farm and now has a nice - and growing - niche for himself. Currently he has about 50 head that he rotates through his 70 acres. Bison meat is highly nutritious, with remarkable levels of protein and Vitamin B12 and low cholesterol, much of this due to its 'pastured' nature. They are also hearty and naturally healthy, so that being outside during our relatively mild winter (as compared to the Plains) is no sweat for them, and Chris says they do very well here.

Bison meat has such a dense, beefy flavor. Though it's a lean meat, bison really stands up to other strong flavors in a recipe. In fact, it needs them to balance out its intense "beefy-ness". Though he makes a 'spicy' style sausage, both the fresh sausage and ground bison are milder and will complement any recipe.

Bison are such an iconic American mammal, with a sweeping legacy. It is wonderful to see them grazing in Lancaster County. It is also great to know that Bison by their very nature, should be raised on pasture, the way that a lot of us prefer our meat animals raised.

EASY BUFFALO LASAGNA
Pam Clark, Observatory Rock Bison Ranch, NBA member

1 lb. ground buffalo

2 cups chopped fresh tomatoes (or tomatoes you canned!)

1 18-oz. jar of your favorite homemade pasta sauce

6 lasagna noodles (no boil), or 2 fresh pasta sheets

1 1/2 cups shredded mozzarella cheese, plus 1/4 cup for finish

8 oz. ricotta cheese

2 Tbsp. fresh parmesean-style cheese, grated

2 Tbsp. fresh oregano or herb to taste

Preheat oven to 375 degrees. Cook sausage/ground meat in skillet over medium heat until no longer pink. Add fresh tomatoes and pasta sauce. In a 9x9 oven safe baking dish, spread 1/3 of meat sauce on bottom. Cover with 3 noodles. Spread 1/2 of the ricotta on noodles, sprinkle 1/2 mozzarella over that. Top both cheeses with another 1/3 of the meat sauce. Repeat layers ending with sauce on top. Cover with foil and bake 45-50 minutes until noodles are tender. Remove foil, sprinkle parmesan and reserved mozzarella on top and bake another 5 minutes until cheese is bubbly. Let stand about 10 minutes and Enjoy!
