The Farmstand has always been a great launching pad for new products coming to market, but it is still only the retail face of the broader work that Fair Food does to promote these products.

A great example of Fair Food's non-profit work is that of program manager, John Eshleman. Last week, John organized a 'Local Artisan Cheese Tasting' for wholesale buyers. The cheese tasting, which took place in 3 locations around the city, was organized in conjunction with the PA Farmstead and Artisan Cheese Alliance. In this one day, over 45 chefs and specialty food buyers tasted 38 cheeses from 11 cheese makers. Projects like these, engaging both the producers and the buyers, help to build the supply and demand for local food.

When you look into our refrigerator at the Farmstand, and see the cheese section starting to collapse under its own weight, you are looking into a little window on local farmstead and artisan cheese production in the region. Though Pennsylvania and New Jersey were slow to start producing the kind of specialty cheeses that could compete with those coming from Vermont or California, we're more than catching up!

NATIVE AMERICAN INDIAN CORN PUDDING
Adapted from www.magicalmeltingpot.com

4 cups raw milk
1 cup maple syrup
1/4 cup unsalted butter
2/3 cup toasted cornmeal
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 ground allspice
1 teaspoon vanilla extract

Preheat oven to 300°. Butter a 2-quart casserole.

In a medium saucepan, combine 3 cups of the milk and the maple syrup over medium heat. Heat until it simmers and then add the butter and vanilla.

In a small bowl, combine the cornmeal, ginger, cinnamon, and allspice.

Using a wire whisk, slowly add the cornmeal mixture to the milk. Reduce heat to low and cook until thickened, stirring occasionally.

Spoon into the greased casserole and pour the remaining 1 cup of milk over the top of the pudding. DO NOT STIR. Bake for 2 1/2 hours, until the milk has been absorbed and the top is golden brown.
