Fresh & New This Week:

Late last week we received more ARTISINAL CHEESES from Cherry Grove Farm, located in Lawrenceville, NJ. We're trying the following cheeses: MAIDENHEAD - a semi soft, creamy, delightfully stinky cheese washed with Flying Fish beer (brewed in Cherry Hill); SHIPPETAUKIN BLUE - a salty, crumbly blue cheese; TOMA PRIMAVERA - a washed rind, creamy, tangy cheese; and HERDSMAN - creamy, raw milk cheese.

Cherry Grove Farm is a great example of a Catherine in Aging Caves diversified, self-sustaining farm. Their milking Jersey cows spend their days grazing on some of the 400 acres at Cherry Grove. All of their delicious cheeses are made with raw milk, and the cheeses must be aged for 60 days or more. After making cheeses on the farm, the farmers feed the leftover whey (a biproduct of making cheese that is high in protein) to their Berkshire pigs. They also raise chickens, lambs and Hereford cows for meat.

To top it all off, the cheese facility AND the cheese maker's house and water are heated by wood dropped off by local arborists who would otherwise have to pay to send to a landfill. If you don't want to visit this amazing farm now, I don't know what will convince you!

As a side note, Catherine and former Farmstand Manager, Emily Teel, have both moved to Italy for the year to attend the Masters Program at the University of Gastronomic Sciences in Piedmont, Italy! The University was founded in 2004 by Carlo Petrini, founder of the Slow Food Movement.
