Last weekend, I had the opportunity to visit Shellbark Hollow Goat Dairy in West Chester, PA. Only 20 miles from Philadelphia, Pete Demchur's property is an island of agricultural activity in a suburban neighborhood of long driveways and groomed lawns. Head down the drive and you are met with roomy pens of purebred Nubian goats basking in the early spring sun, munching absent-mindedly and fixing you with curious looks. Pete's relatively small herd includes about 25 milking goats, several breeding bucks, a pack of yearlings that will start milking next season, and at the moment, over 20 babies. The babies are what inspired the visit, and as you can see from the pictures, were well worth the trip! The herd started kidding in earnest last month and are still at it; the smallest babies were only 4 days old, and the pens were still filled with pregnant females. Pete allowed us visitors to hold and bottle feed the little guys, after which they promptly took naps in our arms. It was a special moment for all of us, and we were amazed at their affectionateness and curiosity.

The adults were also far friendlier than I had expected; the pregnant ones awkwardly waddling up to the fence wanting their necks scratched and heads rubbed. Even the more aggressive males were completely tame with the humans and begged for attention.   They behaved more like dogs than any other herd animals I have ever met- in fact, some people claim that goat intelligence is at par, or even above that of dogs. Possibly the most remarkable thing about the visit was seeing Pete's affection and respect for the animals in his care. Making artisan cheese is a hard career to depend on for your livelihood, so Pete works full time fixing air compressors and often has to fit another 8 hours of farm work or cheese-making into the remaining hours. He has a baby monitor to the barn in his bedroom so that he can hear when does go into labor and checks on infants several times every night. But when you see him with his goats, there is only love for his animals and a sense that he just feels lucky to have them in his life.

The Farmstand is proud to announce that Co-Manager Sarah Cain's Vrapple won 2nd place at ScrappleFest! Yes, her vegan treat beat out most of the real meat versions at this celebration last Saturday at the Reading Terminal Market. The Vrapple was prepared with pan-roasted pumpkin, apples and mascarpone grits by Farmstand Volunteer and chef John Blanchet. Our farm is located in Lebanon County. This marks the seventh year for our farm growing certified organic produce. We had our farm certified organic since 1998.
We enjoy the connection that we have with you as a consumer and are offering a CSA (community supported agriculture) from our farm again this growing season. As a share member you will receive a weekly assortment of veggies and small selection of low spray fruit.

Lancaster Farm Fresh Cooperative (LFFC) are buying seeds and preparing their greenhouses for the 2009 CSA season! Reserve your shares now.

Vegetable and fruit shares are on sale now. LFFC will deliver 25 weeks of locally-grown, freshly harvested and certified organic produce to pick-up sites throughout Philadelphia and the surrounding suburbs. Fruit shares and a weekly pricelist of local farm products including: eggs, chicken, bison sausage, yogurt, raw milk, honey and maple sugar, are available with an LFFC CSA share (special orders not available at RTM and Rittenhouse Square pick-up sites). A full share is $700 and a half share is $375. A $25 discount will be given to individuals who purchase a full share before 3/1/2009 (discounts on full shares only). Vrapple with Sweet Potato, Greens and Shallots

Though not vegan, this is vegetarian, and is delicious!

Poached eggs, goat cheese, a dollop of fresh ricotta, mascarpone, or yogurt would be great on top.

1 T. olive oil

1/2 T. butter

2-3 cups diced sweet potato (about 2 beauregard sweet potatoes)

2-3 ounces vrapple (or your favorite crumbly sausage), diced

1-2 cups chopped kale

2-3 cups chopped spinach

1 large shallot, minced

1/2 cup apple cider

1/4 teaspoon cinnamon

salt and pepper to taste

4 eggs poached (poaching: bring water to gentle boil; slide egg into water 1 at a time out of a small ramekin or prep dish; cook 1-2 minutes)

Cooking:

Heat large skillet over medium heat. Add oil and butter. Add sweet potatoes, a sprinkling of salt, and cook over low-medium heat 5 to 10 minutes. Add vrapple and shallots. Break up vrapple with spoon so it crumbles and distributes through the dish nicely. Once the vrapple cooks down a bit, season with salt and pepper. Crank to medium heat. Add in greens; let them start to wilt. Add cider, cover, let everything stew till cide cooks off over medium heat. Once greens are wilted, sweet potato is a little creamy, etc, add cinnamon off heat and stir gently.

In bowl, put in heaping spoonful of ragu and top with poached egg. Serves 4.
