Spring greens are finally here in force! Lancaster Farm Fresh will be delivering wild crafted WATERCRESS and DANDELION GREENS, red and white SPRING ONIONS, and SAVOY SPINACH on Tuesday, as well as YOUNG RED RUSSIAN KALE and GREEN RHUBARB on Friday afternoon.

The first SPRING GARLIC will arrive from Landisdale Farm on Saturday morning. Dan will also bring us tender bunches of GREEN KALE, buttery YUKON GOLD POTATOES, and lots of spicy BABY ARUGULA. 

If that wasn’t exciting enough, Overbrook Herb Farm will be dropping off BABY PENCIL LEEKS, BABY RADISHES, and adult-size SWISS CHARD on Friday morning.

Wild-harvested DAY LILY SHOOTS will come from Green Meadow Farm on Thursday afternoon. These spring delicacies are juicy and green with a mild oniony aftertaste, and can be used much like scallions in salads or stir-fries.

We have all heard of picking wild huckleberries or strawberries while on a walk in the woods, but most people do not realize that the forest and field are full of wild edibles.  Luckily for us, many of our local farmers know what wild greens are nutrious, delicious, and plentiful this time of year.  

Wild crafted, also called wild harvested greens, are edible leaves, seeds, roots, and tubers of plants that are gathered from the wild. With some ingenuity, many farmers are using knowledge that has been around since Native Americans and colonists harvested wild plants year-round. Today, some of these greens are found in the wild, while others are propagated on the farm. 

Many of these plants are found across the country; some are considered weeds, while others are coveted by food connoisseurs.  Commonly found wild harvested greens are lambs quarters, purslane, wild dandelion, watercress, ramps, and chicory nut. Do not fear, however, because harvesting wild greens is regulated, so they are free of chemicals and cannot be harvested near roads. 

Keep your eyes out this week at the Fair Food Farmstand for beautiful Wild Dandelion greens and Watercress from Lancaster Farm Fresh, and Day Lily Shoots from Green Meadow Farm.  All of these farms are certified organic and consciously harvest these wild edibles.

Spring Garlic and Yukon Gold Potato Soup
From Artisan Restaurant
Yields 6 8oz servings

1 oz Bacon, Diced 1/4 inch (about 2 slices)
4 oz Whole Butter
5 oz Yellow Onion, Diced 1/4 inch (about 1/2 an onion)
10 oz Spring Garlic, White Part Only, Washed and Sliced (about 5 bulbs)
8 oz Yukon Gold Potato, 1/2 inch Dice (about 1 med potato)
1 qt Chicken Stock, Unsalted
1 sprig Parsley stem
1 sprig Thyme
1 Bay Leaf
1 cup Heavy Cream

In a medium size saucepot over low heat combine the bacon and butter. When the butter has melted, add the onions and garlic and cover. Cook gently stirring occasionally until soft. Add potatoes, chicken stock, and herbs. Bring to a boil. Reduce heat to a simmer and cook until the potatoes are tender. Stir in heavy cream. Remove herbs and place the soup in a blender. Puree until smooth. Season with salt and pepper and garnish with chopped chives.


Green Garlic Butter

The addition of greens to this wonderful garlic butter recipe gives it loads of extra raw nutrition. This recipe is endlessly adaptable to any green experiments you might wish to concoct!
Note: If using salted butter, eliminate the salt from the recipe.

1/2 cup unsalted butter
1/2 cup olive oil
1/2 teaspoon salt
12 garlic cloves, crushed
1 cup freshly chopped wild greens  (or parsley or other fresh garden herbs)

Make garlic butter in a food processor by whipping the butter, oil, salt, fresh garlic and greens together until smooth.

The olive oil makes the butter nice and creamy and spreadable, even after refrigerating.  I like to make a batch of this to keep handy in the fridge.

You can also make a larger batch ahead to freeze in small containers when the greens are in season.
