A full three weeks earlier than last year, Jersey ASPARAGUS will be here in earnest by Thursday evening! Farm Fresh Direct in Vineland, NJ will be dropping off an abundance of IPM ASPARAGUS, as well as BUNCHING SPINACH and CURLY PARSLEY.
Lancaster County, a bit slower to warm up than New Jersey, is even pumping out ASPARAGUS already. Certified Organic ASPARAGUS from Lancaster Farm Fresh arrived at the stand on Tuesday. RINEER FAMILY FARMS in Pequea, PA will deliver their first batch of Chemical-Free ASPARAGUS and RED RHUBARB on Saturday morning.
On Tuesday, Jay Montgomery of Calkins Creamery, brought by the first of what I’m sure will be many deliveries of their tasty and creative cheeses. Come by the stand and try the wonderfully creamy havarti-inspired ‘1841’ and ‘4 DOG DILL’, pale ale soaked ‘COWTIPPER’ and smoothly aged ‘PASTURED PAULIN’. We will be sampling Calkins Creamery cheeses all week.
Otterbein Acres in Franklin County has recently re-worked their dry-aged sheepsmilk cheese, EWE’S DREAM, to great effect. This deliciously salty and well-rounded new version has a unique red-tinted rind that looks more like a fancy cake than a cheese. Ask for a sample when you come by this week.

Calkins Creamery is the newest offshoot of a very old dairy operation called Highland Farm in Wayne County, PA. Highland was established by the Bryant Family in 1841 and is still owned and operated by their descendants 167 years later! The farm is now run by the 5th and 6th generations of the family and continues to prosper with a herd of 88 Holstein cows and 165 acres of land. Bill Bryant and his son Zack currently manage the dairy with a firm commitment to land conservation practices. Their cows sustain themselves on grass throughout the spring, summer and fall and are supplemented with grain in the colder months. They use careful pasture landscaping to improve water and soil quality and are in the process of placing their land in an agricultural land trust to prevent it from ever being sold and subdivided.
A few years ago, Emily Bryant, a Penn State trained food scientist, and her husband Jay Montgomery returned to the farm from a stint in California with hopes of strengthening the family business through artisan cheese making. In 2007, the couple set-up a sophisticated creamery just 100 feet from the milking barn and crafted their first batch of raw milk cheese. In the short time that they’ve been in business, Emily, the primary cheesemaker, has produced an impressive array of unique and delicious cheeses. They currently offer more than 15 varieties! Emily gives a portion of the credit to her background in food safety, as well as superb management of the herd. “Our cows are well cared for and comfortable,” she says. “Cow comfort reduces stress and results in an increase of milk production and butterfat.” When asked, her husband says their success with cheesemaking is mostly due to the fact that she is “incredibly smart.” |

Hot Bacon Asparagus Salad
Serves 4
INGREDIENTS:
7 bacon strips, diced
1 pound fresh asparagus, trimmed
1/3 cup vinegar
1 tablespoon sugar
1/2 teaspoon ground mustard
1/4 teaspoon pepper
4 cups salad greens
1/2 cup sliced almonds
2 hard-cooked eggs, sliced
1/4lb Shellbark Farms 'Sharp Chevre' goat cheese
DIRECTIONS
In a skillet, cook bacon until crisp; remove with a slotted spoon to paper
towel. Drain, reserving 2-3 tablespoons drippings.
Cut asparagus into 1-1/2-in. pieces; saute in drippings until crisp-tender.
Add vinegar, sugar, mustard, pepper and bacon. Cook and stir for 1-2
minutes.
In a large bowl, combine the salad greens and almonds. Add the asparagus
mixture and toss gently. Top with eggs and crumbled goat cheese. Serve
immediately.
