Lancaster based This Little Piggy produces infant and toddler foods using the finest local and organic ingredients. The Farmstand has started carrying several of their vegetable and fruit purees created specially for babies starting to show interest in food (around 5 months +), including PEAR or SWEET TATER BABY FOOD (Stage 1) and BEET & SWEET TATER or CAULIFLOWER & CARROT BABY FOOD (Stage 2). As these foods are made without the use of preservatives, the Farmstand will sell them frozen. Special orders for bulk amounts welcome.

After years of wishing that we could find a local cream cheese, two options will arrive at the Farmstand in one week! For classic cream cheese flavor and fluffy texture, try Hails Family Farm’s, ORGANIC CREAM CHEESE (arriving Saturday am). For a slightly denser texture and creamy tangy, try Keswick Creamery’s delicous QUARK. Your morning bagel will thank you!

Also arriving from Hails Family Farm, on Saturday: ORGANIC “EUROPEAN STYLE” DRINKABLE YOGURT in quarts. This tasty product makes a great morning snack, as well providing a healthy dose of pro-biotics. Available in Plain or Vanilla.

Fair Food farm tour attendees from past summers may remember the rich, perfectly smoked flavor of Green Meadow Farm’s SMOKED TURKEY BREAST, which we often feature in the picnic lunches. This extraordinarily tasty, all-natural lunchmeat always gets rave reviews, and we have always wished we could sell it at the stand. As the butcher has agreed to slice it up for us, we will get our wish this Thursday afternoon. Delicious paired with sweet mustard and Green Meadow’s Raw Milk Cheddar!

For an easy, yet impressive, weeknight meal, try a SOY GINGER MARINATED DUCK BREAST from Griggstown Quail Farm. Each breast is soaked in a delicious mixture of soy sauce, fresh ginger, orange juice, Griggstown’s own honey, sesame seeds, sesame oil, and fresh scallions. Ready to sear, fry, or throw on the grill!

Dairy lovers will delight in new certified organic, grass-based products by Paul Hails of Hails Family Farm, based in Wyalusing, Bradford County in northeast PA. Paul’s cream cheese is ideal in desserts or smeared on your favorite bread or bagel. His tangy, drinkable yogurt, available in plain and vanilla varieties, offers a refreshing and lighter alternative for warm weather months.

Paul’s yogurt, cheeses and milk are produced right on the farm, where Ayreshire, Normande, Jersey and Holstein Cross cows roam the land, grazing on grass, not gunk. Hails Family Farm milk products are being sold in Times Square, but you don’t have to leave Philly to enjoy them. Annual Urban Nutrition Initiative Benefit Dinner

Green Village Fundraising Events

Green Village Philadelphia is hosting a month long fundraising event in partnership with Philadelphia Brewing Company (PBC) starting April 15th, just a few days before Earth Day. PBC is selling its spring beer, Fleur de Lehigh, at a discount to participating bars and restaurants and Green Village will receive $1 from every pint sold - until the brew runs out. So get yourself in beer drinking shape and we will keep you posted on where the beer is sold near you? Cost for this - just the usual price of the pint of Fleur de Lehigh.

To round it off, Green Village Philadelphia is throwing a party!
Where: The PBC brewery in Kensington
When: Sunday May 17th, 1-4pm
Three bands: the Estelles - all girl country, the Rockafilly's, and Jim Fogarty and the Tonebenders
Fabulous food from Cosmic Catering, Night Kitchen Bakery and others and of course, fabulous PBC beers - all for the price of your generous donation!
Cost: $25 minimum per ticket - by all means give more if you are feeling it - Green Village is now a 501c3 so your donation is tax deductible. Family friendly. Kids under 16 get in free.

Soy Ginger Duck Breasts with Pac Choi

Notes: Use butter or olive oil instead of duck fat if you don't cook the skin, or need a little extra fat. About 80 percent of the fat in duck skin cooks out, so the crisp cracklings are less rich than you might think.

Makes 4 servings

Ingredients
2 boned 'Soy Ginger' marinated Muscovy duck breasts (about 1.5-1.75lb total), from Griggstown Farm
4 heads pac choi (about 1 1/2 lb. total)
1/4 cup chicken broth

Preparation
1. Pull skin from duck, cutting where needed to release.

2. Lay skin flat in a 9- or 10-inch-wide pan. Bake in a 350° oven until browned, about 30 minutes; turn skin over several times. Drain on paper towels. Pour fat from pan into a container; reserve. Wipe pan clean; set aside. Reduce oven temperature to 300°.

3. Rinse and drain pac choi.

4. Lightly brush one side of each bread slice with 2 teaspoons reserved duck fat. Set bread, fat side up, in a single layer in a 10- by 15-inch pan. Bake in the 300° oven until pale gold and crisp, 20 to 25 minutes. Keep warm.

5. Put 2 teaspoons reserved duck fat in a 10- to 12-inch ovenproof frying pan over high heat. When hot, add breasts and brown on each side, about 6 minutes total. Put duck and pan in the 300° oven. Bake until breasts are just pink in the center (130° to 140°; cut to test), about 5 minutes. Remove from oven. Keeping breasts warm, let stand at least 10 minutes for juices to settle.

6. Meanwhile, finely dice duck skin, return it to its pan, and put in the oven. Bake until sizzling, about 15 minutes. Keep warm.

7. When breasts have rested at least 5 minutes, put 1 teaspoon duck fat and the chicken broth in a 5- to 6-quart pan over high heat. Add pac choi and stir until barely wilted, about 2 minutes.

8. Using a slotted spoon, transfer pac choi to 4 warmed dinner plates.

9. Slice duck breasts across the grain and lay equal portions on plates. Sprinkle with duck skin.
