When Ruth and I met with Casey Spacht of the Lancaster Farm Fresh Coop in February to talk about crops for the coming year that our customers would like, Casey told us that the Coop was growing and taking on new members. Unlike their founding co-op members, several of these new farmer members were not already Certified Organic, but wanted to be. They had been witnessing the successful growth of the Coop, and were excited by its proven viability. These farmers are now in the Transition phase to becoming Certified, and Casey asked us if we thought our customers would be be accepting of this. We believe our customers will be supportive of farmers changing from a chemical-dependant system of raising crops to one where the "system of agriculture and food production involves the building and enhancing of the soil naturally, protection of the environment, humane
treatment of animals, and avoidance of toxic synthetic substances," as the
Pennsylvania Certified Organic website says.
Transitioning is, on average, a 3 year period. During this time you are
farming as if you were already Certified, following the materials guide and
developing your organic system plan. Starting this week you will start to
see labels which state the growing method as, "Transitional." We hope you'll
be as excited and supportive as we are about these farmers' next phase into
sustainability. |

Spinach And Mushrooms Salad With Orange Vinaigrette
From Gourmet Magazine, April 1993
Servings: Serves 8.
Ingredients
1 teaspoon freshly grated orange zest
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 teaspoon Dijon-style mustard
3/4 teaspoon salt, or to taste
2/3 cup olive oil
2 pounds fresh spinach, coarse stems discarded and the leaves washed
well, spun dry, and, if desired, torn into bite-size pieces
1/2 pounds mixed mushrooms, sliced
Preparation
In a small bowl whisk together the zest, the juices, the mustard, and the
salt, add the oil in a stream, whisking, and whisk the dressing until it is
emulsified. In a large bowl toss the spinach and the mushrooms with the
dressing. Alternatively, you could quick sautee the mushrooms, and then toss
with the spinach.
