Three varieties of beets will arrive throughout the week: ORGANIC GOLD BEETS (Paradise Organics,Tues), ORGANIC BABY CHIOGGIA BEETS (Lancaster Farm Fresh, Fri), and IPM RED BEETS (Common Market, Wed). Nutritious greens attached! Come by on Thursday afternoon for the first tender ENGLISH HULL PEAS from Green Meadow Farm.
A new cheese from Valley Shepherd Creamery, PERLITTA, is expected by next week. This cave-aged delight is made with raw cow’s milk and a sheepsmilk wash-- in the vein of aged edam.
STRAWBERRY season is in full tilt, and it is time to start making jam, filling the freezer, or whipping up some fresh ice cream! Did you know that the Farmstand sells whole flat of both retail and jam quality berries? Ask at the stand, or email ruth@whitedog.com to place orders.

A huge thank you to everyone who came out to support the Farmstand at our event last week! It was wonderful to see so many customers and colleagues enthusiastically offering their time and money to make our expansion a reality. We had a great time, and raised almost $5,600!

Farfalle with Golden Beets, Beet Greens and Pine Nuts

1/3 cup pine nuts
4 tablespoons extra-virgin olive oil, divided
2 large onions, quartered lengthwise through root end, sliced crosswise (about 4 cups)
3 garlic cloves, minced
2 bunches 2-inch-diameter golden beets with fresh healthy greens; beets peeled, each cut into 8 wedges, greens cut into 1-inch-wide strips
12 ounces farfalle (bow-tie pasta)
1/3 cup grated Parmesan cheese plus additional for serving
Heat heavy large skillet over medium heat. Add pine nuts and stir until lightly toasted, about 3 minutes. Transfer to small bowl. Add 2 tablespoons oil and onions to same skillet and saute until beginning to soften and turn golden, about 10 minutes. Reduce heat to medium-low and continue to sauté until onions are tender and browned, about 30 minutes longer. Add garlic and stir 2 minutes. Scatter beet greens over onions. Drizzle remaining 2 tablespoons oil over; cover and cook until beet greens are tender, about 5 minutes.
Meanwhile, cook beets in large pot of boiling salted water until tender, about 10 minutes. Using slotted spoon, transfer beets to medium bowl. Return water to boil. Add pasta to beet cooking liquid and cook until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking liquid. Return pasta to pot.
Stir onion-greens mixture and beets into pasta. Add pasta cooking liquid by 1/4 cupfuls to moisten. Season with salt and coarsely ground black pepper. Stir in 1/3 cup Parmesan cheese. Divide pasta among shallow bowls. Sprinkle with pine nuts. Serve, passing additional cheese.
Roasted Baby Beets and Arugula Salad with Lemon Blue Cheese Vinaigrette

1/4 cup fresh lemon juice
1 tablespoon red wine vinegar
1/2 cup plus 1/3 cup extra-virgin olive oil
1/2 cup crumbled Blue Sued Moo Cheese from Keswick Creamery (about 4 ounces)
2 cups roughly torn bite-size pieces French bread
1/4 cup assorted chopped fresh herbs (such as parsley, basil, and rosemary)
1 garlic clove, minced
24 baby beets, trimmed, scrubbed
8 ounces baby arugula (about 12 cups)
Place lemon juice and vinegar in small bowl. Gradually whisk in 1/2 cup oil. Stir in cheese. Season with salt and pepper. (Dressing can be made 1 day ahead. Cover and chill.)
Preheat oven to 375°F. Heat remaining 1/3 cup oil in medium ovenproof skillet over medium heat. Add bread pieces; toss to coat. Add herbs and garlic; toss to coat. Sauté until bread is crisp, about 4 minutes. Using slotted spoon, transfer croutons to plate in single layer. Cool.
Add beets to same skillet, tossing to coat with any remaining herbs and oil. Cover skillet with foil and transfer to oven. Roast until beets are tender, about 45 minutes. Cool beets. Peel, if desired; cut in half.
Toss arugula with 1/2 cup dressing in large wide bowl. Season to taste with salt and pepper. Top with beets and croutons and serve.
Test-kitchen tip:
After being roasted, baby beets peel easily, but the skins are perfectly edible if you choose to leave them on.
