A variety of beans keeps the 'Stand colorful!
Get ready for full-blown summer fruit! Common Market will bring us the first sweet CANTALOUPES of the summer on Friday. Lancaster Farm Fresh Co-Op is helping us fill our squash cravings with GREEN PATTY PAN SQUASH on Tuesday and WHITE BUSH MARROW SQUASH on Friday (cook them both like zucchini). Even though they taste different, these melons and squashes are part of the same plant family - called Curcurbits - and all grow on vines. Green veggies are also keep showing up at the ‘Stand: TENDER YOUNG SPINACH from Landisdale Farm arrived on Weds, and GREEN PEPPERS from Common Market will be in on Friday.
Also on Friday, Lancaster Farm Fresh Co-Op will bring us speckled DRAGON’S TONGUE BEANS to round out our colorful variety of beans. |

Freezer Madness!
Albert and Emily opened Tuesday morning to discover the meat freezer’s thermometer reading a balmy 60 degrees. In other words, it is broken yet again. Not to worry, our new Farmstand will have a new freezer, which will hopefully be less fussy. Special thanks to Albert, Emily, and Yianni for dealing with the spoiled meat, gelato soup, and general mess Tuesday morning, and to Landon, Genevieve, Coryn, Emil, and Shauna for continuing the work to keep the 'Stand running smoothly throughout the rest of the day. Unfortunately, this means we currently have NO MEAT FOR SALE. We will keep you posted on when we will have meat and other frozen treats for sale again.
New Farmstand Space
On a more positive note, the concrete for the new Farmstand space by 12th Street was poured on Monday; it will need to cure for two weeks before anything happens in the space, but things should move quickly after that. Meanwhile, produce arcs (the big wooden shelves we have now that hold most of the vegetables and fruits) for the new Farmstand are being built off-site. Our new space will also have two new freezers, a three-door refrigerator and a new open-air refrigerator!

Raspberry Spoonbread

A traditional Southern favorite, spoonbread is a typically savory dish that’s like a cross between a soufflé and cornbread. Here we transform the simple ingredients into a comforting dessert with the addition of summer’s best raspberries and pure Vermont maple syrup. Any type of cornmeal will work, but we love the texture that stone-ground provides.
Makes 8 servings
ACTIVE TIME: 30 minutes
TOTAL TIME: 1 1/2 hours
EASE OF PREPARATION: Easy
1 cup cornmeal, preferably stone-ground (medium or finely ground)
1 cup buttermilk
2/3 cup pure maple syrup
2 tablespoons butter
1/2 teaspoon salt
4 large eggs, separated
1/4 cup all-purpose flour
2 teaspoons vanilla extract
1/4 cup sugar
3 cups raspberries, divided
8 tablespoons yogurt, optional
1. Preheat oven to 375°F. Coat an 8-inch-square baking dish (or other 2-quart ovenproof dish) with cooking spray.
2. Combine cornmeal, buttermilk, maple syrup, butter and salt in a large saucepan. Cook over medium-high heat, whisking constantly, until the mixture bubbles and thickens. Remove from the heat. Whisk egg yolks in a large bowl. Whisking constantly so the eggs won’t scramble, add 1/2 cup of the hot cornmeal mixture until completely combined. Scrape in the remaining cornmeal mixture and whisk until smooth. Whisk in flour and vanilla until smooth.
3. Beat egg whites in another large bowl with an electric mixer on high speed until soft peaks form. Gradually sprinkle in sugar, continuing to beat until soft glossy peaks form. Fold the whites into the cornmeal mixture. Fold in 2 cups raspberries. Spoon the batter into the prepared dish.
4. Bake until puffed, golden brown on top and the center is set, 35 to 40 minutes. The spoonbread will be slightly wobbly and soft when it is completely cooked. Let cool for 20 minutes. Serve warm, topped with some of the remaining raspberries and yogurt, if using.
Quick Chile Dilly Beans
TOTAL TIME: 1 day
EASE OF PREPARATION: Easy
1 pound green beans, trimmed
3 cups water
2 cups distilled white vinegar
2 tablespoons salt
1 tablespoon pickling spice
1 teaspoon whole black peppercorns
1/2 teaspoon dried dill seed or 4 fresh dill seed heads
2 shallots, peeled and sliced, leaving root end intact
1-2 small fresh red chile peppers, quartered lengthwise
2 cloves garlic, peeled and sliced lengthwise
1. Bring a large pot of water to a boil. Place a large bowl of ice water next to the stove. Cook green beans until tender-crisp, 3 to 4 minutes. Use a slotted spoon to transfer the beans to the ice water to cool. Drain.
2. Meanwhile, combine 3 cups water, vinegar, salt, pickling spice and peppercorns in a medium saucepan. Bring to a boil and stir until the salt is dissolved. Let boil for 5 minutes. Remove from the heat and let stand for 10 minutes to cool slightly.
3. Place dill seed (or dill seed heads), shallots, chiles and garlic in a 2-quart canning jar (or similar-size tempered glass or heatproof plastic container with a lid). Place the beans in the container. Carefully pour the hot vinegar solution through a sieve into the container. Make sure all the beans are submerged in the liquid. Cool to room temperature. Cover and refrigerate for 1 day to marinate the beans
MAKE AHEAD TIP: Refrigerate for up to 1 month.
