OKRA is at the ‘Stand so there is more reason than ever to try it! This interesting fruit (yes, it’s a fruit!) originated in Ethiopia in the 1100s and was grown and eaten by Ancient Egyptians. It spread throughout North Africa and the Middle East and was ultimately brought to the Americas by early slaves. It is commonly found in Southern and Creole cooking and is the famous ingredient in Louisiana Gumbo. This week we have both green and red varieties of okra from Lancaster Farm Fresh Co-Op.
The okra fruit looks like a tubular pod with seeds in the inside and is shaped like a star when sliced. It has plenty of valuable nutrients, including soluble and insoluble fibers, as well as vitamins C and B6. Store your okra unwashed and dry in the crisper of your refrigerator in a paper or vented plastic bag for 2 to 3 days.
Many of you may know okra for its sometimes slimy texture. This slimy juice is what thickens the classic Creole gumbo dish, but you can avoid it you do a quick pan fry. Aside from gumbo, okra flavors are enhanced with tomatoes, onions and corn, shellfish and fish stock. Also, the seeds can be roasted and have been used for centuries as a substitute for coffee! CARROT-GINGER LAYER CAKE
2 - 8" x 2" round cake pans
parchment or wax paper
Unsalted butter, for pans
3 c. all-purpose flour, plus more for dusting pans
1 lb. large rainbow carrots, scrubbed, unpeeled (the color is mostly in the skin)
3 large eggs
1/3 c. buttermilk
1 tsp. vanilla extract
2 c. sugar
1 1/2 c. canola oil
1 Tbsp. fresh grated ginger
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 c. chopped toasted pecans or walnuts
Preheat oven to 375F. Butter cake pans, line bottoms with parchment paper and dust with flour.
Grate carrots to yield 2 1/2 c. Combine carrots, eggs, buttermilk, vanilla, sugar, oil, and ginger in a large bowl and whisk until well combined.
In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Fold into wet mixture. Fold in pecans or walnuts.
Divide batter evenly between two cake pans. Bake at 375 until a toothpick inserted in the center comes out clean. Place cakes, in pans, on a rack to cool for 10 minutes. Remove cakes from pans to racks and cool, top sides up.
PARSNIP CAKE
1- 8" x 2" round cake pan

1 3/4 c. all-purpose flour
2 tsp. baking soda
1 tsp. cinnamon
2 tsp. nutmeg
1 c. sugar
1/4 c. molasses
3 eggs
1/2 c. applesauce
1/4 c. canola oil
1/2 c. chopped toasted walnuts or pecans
1 3/4 c. finely grated, peeled parsnips
Preheat oven to 350F. Line pans with parchment paper. Oil or butter paper, then dust with flour.
Combine flour, baking soda, cinnamon, and nutmeg in a large bowl.
Combine sugar and molasses well in a separate bowl. Beat eggs, one at a time, into sugar mixture. Beat in applesauce and oil. Fold in dry ingredients. Fold in nuts and parsnips.
Pour into pan. Bake 1 hour and 10 minutes, or until center is firm but moist.
HONEY-CREAM CHEESE FROSTING
I used neufchatel instead of cream cheese and I thought it was just as delicious, without being too heavy.
2 pkg. cream cheese or neufchatel, room temperature
1/2 c. honey
(for purple carrot-colored frosting: 2-3 drops of food coloring.)
Beat together cream cheese and honey until smooth. Set aside half of frosting and add food coloring if desired.
ASSEMBLE THE CAKE
you'll need: several baby rainbow carrots, for decoration
When cakes have cooled, trim to perfect circles if necessary. Frost the top of one layer of carrot cake with white frosting, and place parsnip cake on top. Frost top of parsnip cake with white frosting, then place second layer of carrot cake on top of that. Frost sides of cake with white frosting, and top of cake with purple frosting. Garnish with baby carrots.
Really, frosted carrots taste surprisingly good. I thought.
