Big News from Farm to Institution
The Philadelphia Farm to School movement will be in full force this fall thanks to funding from the Delaware Valley Regional Planning Commission, and the PA Department of Agriculture. Led by Fair Food, and in partnership with The Food Trust, the Health Promotion Council, and the School District of Philadelphia, 23 Philly schools will begin to purchase fresh, locally-grown fruits and vegetables for use in their daily meals. This program will help support the region's farmers, increase access to fresh fruits and vegetables among school-aged youth, to spread positive nutritional messaging about these foods, and to continue to make Philadelphia a leader in sustainable food systems.

Pickled Apricots
An unusual and delicious alternative to apricot jam, pickled apricots are delicious served over ice cream, on top of a cracker smeared with goat cheese, or as a nice addition to roasted meats. Try using goldcot apricots – they’re perfect for canning!
[yields 4 pints]
2 cups white wine vinegar
2 cups white wine
2 cups sugar
shredded zest of 1 orange
3 tablespoons shredded crystallized ginger
4 pounds apricots, halved and pitted
In a non-reactive pot, bring to a boil all of the ingredients, except the apricots. Add the apricots and cook them briefly, until they are heated through and barely tender.
Divide the apricots and their liquid among hot, sterilized pint mason jars, leaving ½ inch headspace. Close the jars with two-piece lids and set the jars on a rack or dishtowel to cool undisturbed.
When the jars have cooled completely, check to make sure the lids have sealed. Store the jars in a dark cool place until ready to eat. If the lids have not sealed, refrigerate.
