Last weekend, our former Reading Terminal Market neighbor, Bee Natural, brought over RAW, SPRING WILDFLOWER, and CHUNK HONEY. Even though we are no longer next to each other, we can now carry their honey! We also have NATURALLY RAW and FILTERED HONEY from Two Gander Farm and Apiary in Buckwheat, Summer Amber, and Spring Wildflower flavors. Our honey collection is humming! PASA's Farming for the Future Conference is Coming!

February 4-6 will mark the 19 th Farming for the Future Conference, an annual event put on by the Pennsylvania Association for Sustainable Agriculture (PASA).   The conference features two days of speakers and workshops covering a wide range of topics associated with sustainable agriculture, from farmers' markets to compost.

Though many in attendance are farmers or those involved with sustainability-focused organizations like Fair Food, the conference is a welcoming place for anyone interested in sustainable food systems. The theme of this year's conference is "Providing for a Livable Tomorrow," and is sure to be rousing.

PASA and Fair Food have a long history of working together. Many members of the Fair Food staff, as well as a number of volunteers and farmers who sell through the Farmstand will be in attendance this year. It is an exciting time to be involved in the sustainable food movement, and we are very much looking forward to this meeting of the minds.

Roasted Winter Vegetable Salad
This delicious recipe comes from Farmstand Volunteer, Jennie Noakes. Jennie says she loves cooking this time of year and for those of us who love root vegetables as much as she does, this recipe is perfect!

Main:
1 1/4 cups wild rice
4 1/2 cups water
-
approximately 3-3.5 cups total winter veggies, in a 1-2 inch dice (onions, quartered [or halved, depending on size], sweet potatoes, carrots, parsnips, rutabagas, turnips, or winter squash. I always use onions, and aim for combination of sweeter veggies to balance out the earthiness of the dressing. Feel free to play with it and add what you love).
2 cups winter greens, cut into 1 inch strips (I use collards, but it works well with chard, kale, or beet greens)
1 cup shredded red cabbage
3 cloves garlic, finely diced
4 TB olive oil
salt + pepper

Dressing:
1/3 cup sunflower seeds
1/3 cup olive oil
1 TB honey
2 TB lemon juice
salt to taste

Rinse the wild rice. Combine rice with four cups of water and bring to a boil. Once the water has boiled, lower to a simmer and cover, cooking for 40 minutes or until rice is tender.

Meanwhile, heat oven to 375. Toss diced winter vegetables in 2 tablespoons of olive oil and a generous pinch of salt. Spread vegetables in a single layer over a baking sheet and bake onions and root vegetables are tender and begin to caramelize (this can take anywhere from 30-40 minutes). Turn them two or three times during baking to make sure they caramelize evenly.

On the stove top, heat the remaining 2 tablespoons of oil over a medium temperature. Add the garlic. When it becomes fragrant and starts to brown, add the greens and shredded cabbage. Cook until cabbage is tender and greens are bright and soft, but not limp. If necessary, add a few tablespoons of water to steam greens and prevent garlic from burning.

In a mini-prep, combine sunflower seeds, oil, lemon juice, honey, and salt, and pulse until sunflower seeds are pulverized.
